I'm not fully vegan, but I try to pick the vegan option when there is one. I've heard this called half vegan or flexitarian, I'm calling it Vegan Adjacent, meaning near or almost vegan. (Technically it would mean next to vegan, but you get the idea.) One reason I like this is because I think it's funny that it sounds like math and I'm a nerd.
7 people doing Meatless Monday has the same impact as 1 full time vegetarian. I want to encourage everyone to eat less animal products without feeling pressured to be completely vegan.
My approach is to slowly eliminate animal products from my diet one at a time with the goal of long-term sustainability. I try to find vegan versions that are just as good and sometimes better. Some foods have been easier to cut out than others. I thought I could NEVER give up cheeseburgers until I tried a Beyond Burger.
Over time I'm surprised by how much I don't miss the animal foods I used to eat. I've discovered a new love for vegetables I used to think were gross. (If you've mainly had steamed vegetables, you should really try roasting them.) When I started on this path I never thought I would be 100% vegan. I'm still not. I'm around 80% as of 2020. That's a lot closer than I thought I would be if you asked me 7 years ago.
